An Easy and Healthy Salad
Here is a recipe for a salad that I have always enjoyed. It very healthy with a good source of protein.
1/4 head of lettuce or fresh spinach
2 Avocados
1/2 cup of Cherry Tomatoes
1 lbs of cooked popcorn shrimp (optional)
Thousands Island or French Dressing
Spread the lettuce or spinach on a plate or on the bottom of a bowl.
Peal the avocados and cut them both in half. Be careful to remove the pit from each avocado and then cut each half into quarters and then dice.
Spread the diced avocados on the lettuce or spinach. Add the tomatoes and mix with the avocados.
If you choose to add the shrimp, make to sure that it is completely cooked. Mix it with the tomatoes and avocados.
Drizzle on the dressing. It is a good idea to use a sweet dressing, but feel free to experiment. I prefer American or French dressing, but Thousand Island it good too.
Serve and enjoy!
