Interesting Walnut Strawberry Pinapple Pie
My interesting foray into inventing a pie.
Pie Shell-makes 2 pie shells
2 Cups, finely chopped walnuts
1 Cup self rising flour
1 Cup margarine
1/4 Cup sugar or sugar substitute
Preheat oven to 350 degrees
Mix ingredients into dough and press into two pie plates. The dough will rise as it bakes, so make sure to press it thin. Freeze any left over dough. It will be good while frozen for several weeks.
Bake for 20 minutes.
Fruit Glaze
1 1/2 cup sugar
3 teaspoons cornstarch, dissolved in
1 cup cold water
1 teaspoon fruit flavoring, preferably strawberry for this recipe
Red food coloring if needed
Pour all ingredients into a sauce pan, heat on medium and stir until thickened. Cool and refrigerate.
Filling
2 Cups fresh strawberries
2 4 oz cans of pineapple chunks, drained
2 Cups fruit glaze
Slice the strawberries into quarters. Mix strawberries, pineapple, and glaze in large bowl. Pour pie filling into shells and refrigerated. Slice into portions, top with whipped topping and enjoy!
