Bran Muffins That Taste Good, And They Won't Break The Glass If You Thow Them Out A Window!


When someone says bran muffins, everyone usually thinks of muffins that have the texture and taste of bricks, but these bran muffins are healthy and tasty.

Ingredients
3 cups unprocessed wheat bran
1 cup boiling water
1 cup sugar
1/2 cup butter
2 1/2 cups unbleached flour
2 tsp baking soda
2 eggs
2 cups skim milk
1 tbs cinnamon
1 tbs vanilla
1tbs nutmeg

Bring the water to boil and add one cup of the wheat bran to the water, stir and set aside. In a large bowl, blend the sugar, butter, vanilla, cinnamon, and nutmeg. Slowly mix in the flour, baking soda until well blended. The mixture will appear very dry. Add the two eggs and the milk. Mix well.

Spay a muffin tin with cooking spray, fill each of the muffin cups half way with the batter. Bake at 400 degrees for fifteen minutes.


Note:
The reasons that most bran muffins can taste like rocks and sticks is because most bran muffin recipes call for molasses, brown sugar, and butter milk. Both molasses and brown sugar are used in rum, and if you don't have the taste for rum, well you are not going to like most bran muffins. The butter milk can also lend an unpleasant flavor and make the muffins dense.
